A package was waiting for me in my post office box this afternoon which contained my brand new silicone mini donut pan! Of course I had to try it out tonight:)
For all of the ingredients, these were pretty darned easy to make and turned out to be delicious little nuggets of pumpkiny goodness!
This will require two bowls. In the first bowl mix the following:
1-3/4 cups flour
1-1/2 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/8 teaspoon ground cloves
In the second bowl combine:
1/3 cup vegetable oil
1/2 cup brown sugar
1-1/2 teaspoon vanilla extract
3/4 cup canned pumpkin
1/2 cup milk
Whisk it together and it looks a lot prettier!
Slowly add in the dry ingredients from bowl #1. Don’t over mix!!!
I was going to try and fill my mini donut pan by using a squeeze bottle, but the batter was thickening too fast for that to happen.
Decided to use a trusty spoon. If I had the patience, I would have used a pastry bag and filled them only as full as necessary to get the perfect little donuts like you’d see on the blue-eyed bakers page where I got this recipe. Theirs are beautiful:)
Bake in a 350 degree oven for 8-9 minutes or until they spring back when touched.
They turned out great and taste absolutely delicious even without the extra cinnamon and sugar coating.
